AUTUMNAL FIG AND FETA TRAYBAKE

Everything is better with feta, right? Try this one-pan wander of tangy baked feta cheese that bounces beautifully between aromatic sweet figs, popping hot olives, crunchy hazelnuts, lemon & chili! TO FREEKEN DIE FOR!!! Serve alongside a big garden salad, so sexy and SO satisfying!!

Serves 4

400g (2 blocks of feta cheese)
4 Tbsp. extra virgin olive oil
100g fresh figs or any fruit you like, cherries and apricots work well too!
1 lemon sliced into 8ths.
100g pitted olives
50g chopped hazelnuts OR walnuts
1 tsp chilli flakes (leave out if you do not want it spicy)
Herbs such as oregano, rosemary, or thyme!
Coconut balsamic to sloshhhh

Preheat oven 180C. Prepare the traybake by simply laying down your drained feta cheese in a roasting dish. Simply place all the other ingredients in and around the feta and bake for 15-20 minutes in a moderate oven before sloshing with coconut balsamic vinegar to ramp up the volume!! Enjoy this one pan dish foodies xx
