These make a wonderful Christmas thank you.  I packaged them up in noodle boxes which you can get at Spotlight or if you are after larger quantities, Gilmores.  With a piece of red celophane inside and a Christmas ribbon tied on the outside they look spectacular!


500g (2 large blocks) of White Chocolate ( I used Whittaker’s)
1/2 cup coconut
1/2 cup rice bubbles
1/2 cup of pistachios
1 & 1/2 cup of mini marshmallows
3/4 cup red cherries
3/4 cup green cherries

Line a small baking dish or sponge rool tin with baking paper (aprox 12cm x 20cm).
Chop the cherries in half and add to a large bowl along with all the other ingredients except the chocolate.  Carefully melt the chocolate over a double boiler and when completely melted mix into the other ingredients.  Pour this mix into your lined dish.  Smooth the top and refrigerate until set.  Chop into small pieces, before packaging.

Makes approx. 20-24 pieces
