This recipe was kindly supplied to me by Angela from Curious Croppers who I bought the Tomatillos from. I had been interviewing food writer Rowan Bishop and admiring her garden when I saw her tomatillo plants and thought next year I am going to give those a try. The very next day I was wandering around Clevedom Market only to find them at the Curious Croppers stall, so couldn’t resist buying a punnet. The salsa was so easy and delicious Tomatillos are definitely going in the garden next summer! I served the salsa with corn chips one night and then thenext on chicken tacos the next, a huge success both nights.
- 250gm tomatillos
- 1 Chilli
- ½ Red Onion
- Coriander
- 1 tsp Olive Oil
- 1 tsp lime juice
- ½ tsp salt
Remove husks from tomatillos and rinse.
Finely chop tomatillos, chilli, onion and coriander (or pulse in a food processor). Stir into mixture olive oil, lime juice and salt until well blended. Cover and chill before serving.
