Recipe: Delissi Restaurant, Mount Maunganui
500g green apples
900ml cider vinegar
1.5kg brown sugar
3 tbsp crushed ginger
1½ tbsp salt
2 cinnamon sticks
5 star anise
1 tbsp peppercorns
1 tbsp whole allspice
1 tsp chilli
Peel tamarillos by cutting a small cross in the tip of each one and placing in boiling water for 20-30 seconds, remove and refresh in ice cold water. Grip skin and peel towards stem until all skin is removed.
Peel apples and onions and chop all three into uniform pieces approx 2cm cubes.
Place in a large pot with all ingredients and bring to the boil stirring occasionally. Turn down heat and simmer for 90 minutes uncovered. Stir occasionally to prevent sticking to the bottom of pot.
Ladle into hot sterilized jars, seal and leave to cool.
