This was so good it went too fast for me to get a picture. But I picked up some more fresh raspberries from the Hamilton Farmer’s Market this morning so will be making it again!
1 punnet of raspberries
¾ cup sugar
1 cup lemon juice
Put the raspberries and sugar and lemon juice together. Stir and let stand for an hour or so, mixing every now and again so the sugar dissolves. Pass through a sieve to remove the raspberry seeds. Serve with soda water and some fresh mint.
