Here is a great solution to using up that left over ham or turkey for a great meal on Boxing day.  You can even throw in some of the left over roast spuds!

I made a wholemeal short pastry but if you wanted to be super quick simply use store bought ready rolled flakey pastry, you won’t even need to blind bake it then.

For the Pastry

2 cups wholemeal flour
120g butter
1 egg
2-3 Tblspns water

In a food processor add the flour and chopped butter, process until the fine breadcrumb stage.  Add the egg and process, adding a little of the water at a time until the pastry comes together.  Wrap in cling film and chill for 30 minutes.

Roll the pastry our and line a large quiche.  Cover with baking paper and add pastry weights or beans and blind bake in a 180C oven for 20 minutes.  Remove the beans and paper and return the pastry case to the oven for a further 10 minutes.

For the filling

Ham or turkey
2 bunches of asparagus
Cooked potatoes
Camambert
8 eggs
1 & 1/2 cups milk
salt and peper
1 Tbalspoons lightly toasted pine nuts

Slice the potatoes (roast kumara and or pumpkin also work) and layer on the base of the pastry case.  Follow this with some ham (or turkey) half the asparagus and camambert and then repeat the layers again.
In a bowl whisk together the eggs and milk. Season this well with salt and pepper and then pour into the pastry case. Sprinkle with pine nuts and bake at 170C for 45-60 minutes.  You want the middle to be firm, indicating the egg is all cooked.
