6 cloves of garlic
2 red chillies
2 tbsp coriander powder
2 tbsp cumin
Peel and chop all the vegetables into similar sizes pieces.
Melt the butter in a large pot until slightly brown.
Add all vegetables and cook on a medium heat for 15-20 minutes, stirring occasionally to get a nice caramelisation on the vegetables.
Add cumin and coriander and cook for another 5 minutes.
Add water or vegetable stock to cover the vegetables.
Cook until vegetables are soft and season with salt and pepper.
Blend with a stick blender or food processor.
Serve with a little yoghurt and a squeeze of lemon.
