Gingerbread biscuits

These are a great festive treat you can get the kids to help make and decorate.  Or if it’s not Christmas time this dough makes wonderful gingerbread men also.

1/3 cup brown sugar
1/3 cup sugar
2/3 cup golden syrup
1 tsp baking soda
150g butter
2 tsp ground ginger
2 tsp cinnamon
½ tsp ground cloves
1 egg
3 & ¾ cups flour

In a medium sizes pot melt the sugars and golden syrup, stirring with a wooden spoon to avoid it catching and burning.  When the mixture comes to the boil add the baking soda, stirring until the mixture froths up and turns a pale golden colour.

Take the pot off the heat and mix in the butter until it has completely melted.  Then add the remaining ingredients.  Mix until it forms a soft dough.

Turn the dough out onto a floured bench and knead until smooth.  Divide the dough into 2, cover in cling film and refrigerate for at least 30 minutes.

Roll the rested dough out on a floured bench to approximately 3-5mm thick.  Using cookie cutters cut into desired shapes and place these on baking trays lined with baking paper.

Bake in a 180C oven for around 10 minutes, depending on the size of the cookies.  They should be firm to the touch and just starting to brown around the edges.

When cooled ice to decorate.

Royal Icing

1 egg white
1 & ½ cups icing sugar

Beat the egg white and icing sugar until it forms soft peaks.  (approximately 5 minutes)  Place the icing into a piping bag with a fine tip.
