1tsbp vegetable oil
1 onion, diced
2 cloves of garlic, finely chopped
2 tsp garam masala
½ tsp dried chilli flakes
1 tsp fenugreek seeds
3 cups tightly packed chopped spinach leaves
¼ cup cream
200-250g paneer, cut into bite sized cubes
Over a medium heat place a heavy bottomed saucepan with the oil. Add the onion and garlic and saute for a few minutes. Add the garam masala, fenugreek and chilli flakes and continue stirring for a few minutes. In batches add the spinach until it wilts. Stir in the cream and blitz in a food processor or a hand held blender. If you want to make the puree thinner, just add water or a dash more cream.
Add the paneer and stir over a medium heat for 3-5 minutes.
