I am just back from a weekend in Wellington, a foodies heaven at the best of times but I was down there for the NZ Food Bloogers Association conference AND it was Wellington on a Plate.  Needless to say I had a great time.  We recieved some great treats in our goodie bags and when I got home I discovered the jar of 100% Nutz Peanut Butter( www.100percentnutz.com ).  So here are my simple yet delicious double chocolate peanut butter cookies using their peanut butter and Whitakers dark chocolate, a great combination.

¾ cup brown sugar
85g soft butter
½ cup peanut butter
1 egg
1/2 tsp vanilla essence
1 cup self raising flour
300g dark chocolate (I used Whitakers 72% darkGhana)
100g white chocolate

Chop the white chocolate and 200g of the dark chocolate.
In a bowl add the sugar, butter, peanut butter, egg and vanilla.  Melt the remaining 100g of dark chocolate and mix in.  Beat with a wooden spoon before stirring in the flour and chopped chocolate.
Roll into tablespoon size balls, flatten with a fork and bake on a lined baking tray at 180 degree C for 10-12 minutes.

Tip: rest the dough in the fridge for 10 minutes to firm up before rolling into balls.
