cranberry chutney

You can now get frozen cranberries from most supermarkets.  In fact there is a company in New Zealand growing cranberries!  So we no longer have to rely on store bought sauces and jellies to accompany your lovingly roasted turkey.  This chutney also goes well with other cold meats like ham or chicken as well as cheese.

500g fresh or frozen cranberries
2 small Granny Smith apples
1 onion
2 cups brown sugar
¾ cup apple cider vinegar
Zest of one orange
¼ tsp ground cloves
¼ tsp allspice
½ tsp ground ginger
½ tsp ras al hanout

Peel and finely chop the apples and onion.  Add these and all the remaining ingredients into a heavy based saucepan and heat, stirring often until the sugar has completely dissolved.  Bring to a simmer and cook for 30 minutes until thick and jammy.

Pour into sterilised jars and seal.
