This recipe is one I have adapted from a Nigella Lawson recipe. It is rich, moist and dark but the taste of the Guinness is quite subtle. If you didn’t have Guinness you could quite easily substitute it for strong coffee. But it’s St Patrick’s Day so Guinness is definitely called for!
1 cup Guinness
2 cups sugar
½ cup cocoa
½ cup natural yoghurt
2 cups flour
2½ tsp baking soda
In a pot heat the Guinness and chopped butter until the butter has completely melted.
Stir in the sugar and cocoa.
Whisk the eggs and yoghurt together and add to the Guinness mixture.
Finally, using a whisk to avoid getting lumps, stir in the flour and baking soda. Mix until smooth.
Pour the mixture into a 23cm greased cake tin and bake at 180°C for 45 minutes.
I iced mine with a simple ganache.
