Argentina’s answer to salsa Verde, chimichurri is a spicy green herb sauce that goes perfectly with grilled meats.  It’s a wonderful easy condiment to make which will jazz up your next bbq.

Chimichurri sauce

¼ cup diced shallots
2 garlic cloves
1-2 chillies
1 cup fresh coriander
1 cup fresh oregano
1 cup of fresh parsley
¼ cup red wine vinegar
½ cup extra virgin olive oil
good pinch salt

Place all the ingredients into a blender and blend until smooth.  Check for seasoning.
Will keep for over a week in an airtight container in the fridge.
