This is a great alternative to sugar ladened traditional jams.

250g frozen berries (approximately 2½ cups)
¼ cup apple juice
¼ cup chia seeds
2 tbsp maple syrup, Yacon syrup or honey*

Place the berries and juice in a small pot and heat. Simmer on low for 10 minutes then stir in the chia seeds and maple syrup. Check the sweetness and adjust if need be.
Pour into a jar and refrigerate.

*If using maple syrup ensure it is genuine maple syrup not maple flavoured syrup, which is simply flavoured sugar syrup.

Chia seeds are an excellent source of fibre, packed with antioxidants, full of protein, loaded with vitamins, minerals, and the richest known plant source of Omega-3.
