This is a great alternative to traditional mashed potato, plus you get the added nutritional benefit of broccoli!
500g potatoes (I used Agria as they are great for mashing)
1 garlic clove, peeled (optional)
250g broccoli florets (approximately 1 head)
¼ cup milk
salt and pepper
Peel the potatoes and chop into 2cm pieces (this mean a med potato cut into about thirds). Put potatoes and garlic in a pot and fill with cold salted water so there is about 2cm of water above the potatoes. Bring to the boil and simmer for 10-12 minutes.
Add the broccoli florets and cook for a further 10 minutes, or until the potatoes are cooked.
Drain well. Add the butter and mash. When the butter has melted through add the milk, mash again. Finally check for seasoning and then serve.
