This is a deliciously moist cake with wonderful spice flavours, perfect served with a dollop of cream!
4 grated apples
125g butter
1 & 1/2 cups sugar
2 eggs
2 cups flour
1 & 1/2 teaspoon baking soda
Pinch salt
½ teaspoon nutmeg
1 teaspoon cinnamon
½ teaspoon ground cloves
½ teaspoon mixed spice
1 cup raisins
Cream the butter and sugar, then add the eggsa and grated apple. Mix well before adding the dry ingredients. Gently fold until combined.
Bake in a greased cake tin for 50-60 minutes at 180 degreeC. To check that it is cooked insert a skewer in the middle and if it comes out clean the cake is cooked.
