This classic apple cake is a perfect afternoon treat to bake for Mum this Mother’s day.
1 cup raisins
½ cup brandy
1 cup self raising flour
1 tsp baking powder
2 tsp nutmeg
2 tsp cinnamon
1 tsp ginger
1 tsp cloves
1&1/4 cups sugar
2 Granny Smith apples
½ cup walnuts
Soak the raisins in the brandy for at least half an hour.
Cream the butter and sugar until fluffy, then beat in the eggs one at a time.
Fold in the dry ingredients and the soaked raisins.
Chop the unpeeled apples into small pieces and mix in.
Pour the mixture into a greased 21 cm cake tin and bake in 180C oven for 1 & ¼ – 1& ½ hours.
Allow to cool before dusting with icing sugar to serve.
