4 eggs
2 egg yolks
3/4 cup caster sugar
1 cup passionfruit pulp
Zest of a lemon
Juice of 2 lemons
125g butter, chilled, chopped

Put eggs, egg yolks and sugar in a large heatproof, microwave-safe jug or bowl. Whisk until well combined, and then add the passionfruit pulp, lemon zest and juice and butter.

Microwave for 45 seconds and then whisk for the same amount of time. Repeat this 3-4 more times until the curd is bubbling and thick. Pour hot passionfruit curd into sterilised jars and seal. Refrigerate to cool
