1 onion, finely chopped
2 cloves garlic, finely chopped
1&1/2 teaspoons Ras al hanout
1 teaspoon cumin
½ teaspoon sumac
½ teaspoon smoked paprika
1/2 teaspoon turmeric
1 Tablespoon tomato paste
Fresh herbs, coriander and mint
400g lamb mince

Heat a little oil in a pan and gently fry the onion, garlic and spices.  When the onion has softened add the lamb mince and continue to cook.  When the lamb has browned add the tomato paste and 1 cup of water.  Continue to simmer gently until the all the liquid has evaporated.  Check for seasoning and serve garnished with chopped herbs along with hummus, grilled pita and zucchini and carrot salad.

 

Zucchini  & Carrot Salad

2 carrots, peeled and grated
2 zucchini grated
Chopped coriander
Zest and juice of an orange
1/4 cup roasted pistachios
2 tablespoon french vinagrette
2 Tablespoons currants

Mix all the ingredients together and allow to stand for at least 30 minutes before serving.
