This is a fabulously moist cake perfect for those of us who never get organised enough to make the Christmas cake in June. Made in large muffin tins it also creates a great cheats Christmas pudding. Simply nuke in the microwave and serve with lashings of custard.
6 cups mixed fruit
1 apple, grated
½ cup whiskey
1/2 cup orange juice
1 cup brown sugar
185g butter, soft
½ cup ground almonds
1&1/2 cup flour
1 tspn nutmeg
½ tspn of ground ginger, cloves and cinnamon
½ tsp baking soda
Soak the fruit in the whiskey and orange juice overnight.
Cream the butter and sugar until just combined then add the eggs one at a time, beating until just combined between each addition. Add the soaked fruit and
remaining ingredients to the butter mix and stir with a wooden spoon.
Spread mix into a prepared 20cm tin that has been lined with a double layer of baking paper, or use one of the Wooden Cakebox Co’s cake boxes.
If not icing decorate now with nuts or cherries.
Bake at 150C for aprox. 3 hours.
