Recipe: Henry and Ted Cafe, Papamoa | Vegan, GF, nut free and can be made paleo

Easy, fast, tastes amazing! This makes a large salad – perfect if you are feeding a crowd or can easily be halved.

8 cups grated carrot
2 red onions, thinly sliced
½ cup tamari roasted pumpkin seeds
1 cup parsley, chopped

Dressing
3 tbsp sunflower oil
1½ tbsp sesame oil
2 tbsp soy sauce
2 tbsp lemon juice
4 tbsp grated ginger
2 tsp garlic puree
salt and pepper to season

Combine all the salad ingredients together in a bowl.
Mix all the dressing ingredients together, give it a good beating.
Pour dressing over the salad mix and mix well. Season to taste.
