Roast Beef-2 (800x533)

Recipe Serves 3-4

Cook Time 30 mins

Ingredients:
1 pack Silver Fern Farms Beef Prime-Cut Roast
2 Tbsp Mrs Rodgers Beef Rub
2 Tbsp Olive Oil.

Roasted vegetables of your choice:
Carrots
Pumpkin
Yams
Onions
Parsnips
2 Tbsp extra virgin olive oil
Salt and freshly ground black pepper

Cooking Directions:

Pre-heat the oven to 200 ˚C. Remove the beef prime-cut roast from the packaging and let the meat bloom for at least 10 minutes.

In a baking dish place a layer of vegetables about the same size. Toss with 2 tablespoons extra virgin olive oil, salt and freshly ground black pepper and 1-2 tablespoons fresh rosemary leaves.

Bake at 200 Celsius for 30 minutes.

Sprinkle the beef rub onto a chopping board. Rub the oil over the roast, and then roll it in the rub to coat it all over. Roast for 20 minutes. Remove the roast from the oven and allow the roast to rest for 10 minutes.

Slice roast across the grain and serve with roasted vegetables.

  1. My tips for creating the best roast… Room temperature for meat, season well, allow longer time for the meat to cook and rest. Think seasonally and create a roasted meal that works with the season. I love a good pot roast at this time of the year, as the longer slower cooking plus the wine and stock make a very unctuous feast! Choose a different cut and experiment with flavours…not all roasts have to be the same !
